How to Make Sushi: A Step-by-Step Guide

  1. How to Make Sushi Rice

Sushi rice, or shari, is the heart of any sushi dish. Follow these steps to cook it perfectly:

Ingredients:

•   2 cups of sushi rice
•   2 cups of water
•   1 tablespoon Mirin rice vinegar
•   2 tablespoons of sugar
•   1 teaspoon sesame oil
•   1 teaspoon of salt

Instructions:


1. Rinse the Rice: Place the sushi rice in a fine-mesh sieve and rinse under cold water until the water runs clear. This removes excess starch, resulting in fluffy rice.
2. Cook the Rice: Combine the rinsed rice and water in a rice cooker or a pot. If using a pot, bring to a boil, then cover and reduce the heat to low. Cook for 18 minutes, then remove from heat and let it sit for 10 minutes with the lid on.
3. Season the Rice: While the rice is resting, add rice vinegar, sugar, sesame oil and salt. Gently fold this mixture into the cooked rice with a wooden spoon, being careful not to mash the grains. Allow the rice to cool to room temperature before using.

  1. Sushi Fillings

Preparing the Fillings:

1.  Vegetables:
•   Cucumber, Carrot, and Avocado: Slice lengthways into long, thin sticks, suitable for rolling inside the sushi.
2.  Spicy Mayonnaise:
•   Mix mayonnaise with a squirt of Sriracha sauce to create a spicy mayo. Adjust the amount of Sriracha according to your taste preference.
3.  Tempura Prawns:
•   Ingredients:
•   Prawns 
•   1/2 cup flour
•   1 tablespoon flour (for coating the prawns)
•   2 tablespoons cornstarch
•   Sparkling water (enough to create a batter consistency)
•   Method:
•   Coat the prawns lightly with 1 tablespoon of flour.
•   Mix the remaining flour, cornstarch, and enough sparkling water to make a batter.
•   Dip the floured prawns into the batter and deep-fry until golden and crispy. Drain on paper towels.
•   Serving Suggestion:
•   We combined our tempura prawns with slices of avocado, cucumber, and a dollop of mayonnaise for a rich and satisfying filling. Feel free to customise the ingredients to suit your taste.
4.  Seafood Sticks:
•   We paired seafood sticks with cucumber, avocado, and a touch of spicy mayonnaise for a delicious combination. However, feel free to customize your sushi to your personal taste by adding or substituting ingredients.
5.  Tuna:
•   We used canned tuna, mixed with spicy mayonnaise, cucumber, and avocado, for a creamy and refreshing filling. But as with the seafood sticks and prawns, the choice of ingredients is up to you—feel free to experiment with different combinations.
6.  Vegetarian Option:
•   Besides the cucumber, carrot, and avocado, you can also use other vegetables like bell peppers or pickled radish (takuan) for a vibrant vegetarian sushi option.

Sushi Rolling Instructions:

Instructions:

1.  Prepare the Rolling Mat:
•   Place a sheet of plastic wrap over your bamboo rolling mat to prevent sticking.
2.  Assemble the Sushi:
•   Lay a sheet of nori, shiny side down, on the plastic-covered mat.
•   Wet your hands to prevent the rice from sticking, and spread a thin layer of sushi rice evenly over the nori, leaving a 1-inch border at the top.
•   Arrange your choice of fillings in a line across the centre of the rice.
3.  Roll the Sushi:
•   Begin rolling the sushi tightly using the bamboo mat to guide the roll. Press gently but firmly to ensure a tight roll.
•   Once fully rolled, use a sharp knife to slice the roll into bite-sized pieces.
