Ingredients

For the smoky tomato relish

  • 1 tin chopped tomatoes
  • 1 tsp smoked paprika
  • 1 tbsp balsamic vinegar
  • 1 tsp agave syrup
  • Salt and black pepper, to taste
  • Optional pinch of chilli flakes

For the kale mix

  • 1 handful kale, roughly chopped
  • 2–3 mushrooms, sliced
  • ¼ red onion, sliced
  • 2–3 cherry tomatoes
  • Splash of olive oil

For the eggs and toast

  • 2 eggs
  • 1–2 slices sourdough bread
  • Salt and black pepper

Method

  1. Start with the smoky tomato relish. Add the chopped tomatoes, smoked paprika, balsamic vinegar, agave syrup, seasoning and chilli flakes if using to a small saucepan. Simmer gently for 8 to 10 minutes until thickened and rich.
  2. Heat a splash of olive oil in a frying pan over a medium heat, then add the kale, mushrooms, red onion and cherry tomatoes. Sauté until the vegetables are cooked through and the kale has wilted.
  3. While the vegetables are cooking, whisk the eggs in a bowl with a little salt and black pepper, and toast the sourdough.
  4. Once the vegetables are cooked, plate them up with the toast.
  5. Pour the eggs into the same pan, reduce the heat, and cook gently, stirring until softly scrambled and still creamy.
  6. Add the scrambled eggs to the plate and serve with the smoky tomato relish on the side.
