Broccoli and Cauliflower Soup

I adore a good hearty winter vegetable soup, particularly one that is packed with so much goodness! Crafted with the freshest cauliflower and broccoli, not only is the taste a sheer delight, but it also aligns with a health-conscious, plant-based lifestyle. This soup is an vegans dream, offering a comforting warmth and nutrients with every spoonful.

Ingredients:

  • 1 head of cauliflower, chopped
  • 1 carrot
  • 1 head of broccoli
  • 6 cups vegetable broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions:

Sauté the onion and garlic until fragrant. Add cauliflower, chopped carrot and vegetable broth to the pot. Bring to a boil, then simmer until cauliflower is almost cooked. Add the kale and broccoli and cook until both start to soften. Blend to desired consistency and season with salt and pepper. Serve with a warm bread roll or cheese toasty! (If vegan use a vegan cheese alternative)
