Ingredients
• 2.5 cups chestnut mushrooms, cleaned and sliced
• 1 yellow onion, finely chopped
• 2 garlic cloves, sliced
• 1 cup walnuts
• 1/2 tbsp olive oil
• 2 tbsp miso paste
• 1 tbsp Dijon mustard
• 2 tbsp balsamic vinegar
• 1/2 tbsp dried thyme
• 1/2 tbsp dried rosemary
• Salt and pepper to taste
• Fresh parsley, for garnish (optional)
Instructions
1. Toast the Walnuts: In a dry frying pan, toast the walnuts over medium heat for 3-4 minutes, stirring frequently until golden and fragrant. Remove from the pan and set aside.
2. Cook the Vegetables: In the same pan, heat the olive oil over medium heat. Add the chopped onion and cook until it’s soft and translucent, about 5 minutes.
3. Add the Mushrooms: Add the chestnut mushrooms to the pan and cook until they release their liquid and become golden brown, around 8-10 minutes. Add the garlic and sauté for another 1 minute.
4. Season: Sprinkle the dried thyme, rosemary, salt, and pepper over the mushrooms. Stir well, allowing the flavours to meld for a few more minutes.
5. Blend: Transfer the mushroom mixture to a food processor, along with the toasted walnuts, Dijon and miso paste. Blend until smooth and creamy, scraping down the sides as needed. Taste and adjust seasoning if necessary.
6. Chill: Transfer the pâté to a bowl or airtight container. Chill in the fridge for at least 1 hour to allow the flavours to develop.
7. Serve: Garnish with fresh parsley if desired and serve on your favourite bread or crackers.
Tip: This mushroom pâté can be stored in the fridge for up to 5 days, making it a convenient make-ahead option for gatherings or busy weeks.
