Ingredients:

•   1 medium-sized pumpkin (about 2 kg), peeled and chopped
•   2 tablespoons olive oil
•   1 large onion, chopped
•   3 garlic cloves, minced
•   1 teaspoon ground cumin
•   1/2 teaspoon ground coriander
•   1/4 teaspoon cayenne pepper (adjust to taste)
•   1 liter vegetable or chicken stock
•   Salt and pepper to taste
•   1/2 can (200 ml) coconut milk
•   Juice of 1 lime
•   Fresh coriander, for garnish

Method:

1.  In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until soft.
2.  Stir in the cumin, coriander, and cayenne pepper, cooking for another minute.
3.  Add the pumpkin and stock. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until the pumpkin is tender.
4.  Use an immersion blender to puree the soup until smooth.
5.  Stir in the coconut milk and continue to heat for a few minutes. Add the lime juice and season with salt and pepper.
6.  Serve hot, garnished with fresh coriander.
