Ingredients
For the salad:
• 2 salmon fillets
• 1 tbsp vegetable oil
• 1 small red onion, finely sliced
• 1 small cucumber, halved and sliced
• 1 cup cherry tomatoes, halved
• 1 long red chilli, finely sliced (adjust to taste)
• ½ cup fresh coriander leaves
• ½ cup fresh mint leaves
• 2 tbsp crushed roasted peanuts
For the dressing:
• 2 tbsp fish sauce
• 2 tbsp lime juice
• 1 tbsp palm sugar or brown sugar
• 1 garlic clove, finely grated
• 1 red chilli, finely chopped
Method
1. Cook the salmon: Heat the vegetable oil in a pan over medium-high heat. Cook the salmon fillets for about 3-4 minutes on each side until golden brown and just cooked through. Remove from the pan and allow them to cool slightly before flaking into large chunks.
2. Make the dressing: In a small bowl, whisk together the fish sauce, lime juice, palm sugar, garlic, and red chilli until the sugar dissolves.
3. Assemble the salad: In a large bowl, combine the red onion, cucumber, cherry tomatoes, and sliced chilli. Add the flaked salmon and gently toss everything together.
4. Add the finishing touches: Drizzle the dressing over the salad, then sprinkle with fresh coriander, mint leaves, and crushed peanuts. Give it a final toss and serve immediately.
