Miso Soup Recipe

Ingredients (Serves 2)

125 g firm silken tofu

4 g dried shiitake mushrooms

6 g dried kelp (kombu)

2 tablespoons miso paste

1 spring onion, finely chopped

50 g fresh mushrooms (e.g., button or shiitake)

10 g sliced ginger

500 ml water

Toasted sesame seeds for garnish

Instructions

1. Prepare the Stock

In a medium saucepan, pour in 500 ml of water. Add the dried shiitake mushrooms and kelp, allowing them to soak for 30-60 minutes. This step enhances the flavour of the broth by extracting the natural umami from the dried ingredients.

2. Cook the Broth

Place the saucepan on medium heat and cook until the water is just about to boil. Remove the kelp and dried shiitake mushrooms. Slice the rehydrated shiitake into thin strips and set aside.

3. Add the Fresh Ingredients

To the broth, add the sliced ginger, fresh mushrooms, and tofu (cut into small cubes). Return the rehydrated shiitake mushrooms to the saucepan, along with the spring onions. Simmer gently for a few minutes to heat through.

4. Incorporate the Miso

Remove the soup from heat. Place the miso paste in a small sieve and submerge it into the broth. Use a spoon to press the miso paste through the sieve, ensuring it dissolves evenly without clumps. This method preserves the delicate flavour and probiotics of the miso.

5. Serve

Ladle the soup into bowls and garnish with toasted sesame seeds. Serve immediately while warm.
