Ingredients:
For the tofu:
• 300g tofu (pressed and cubed)
• 2 tbsp soy sauce
• 1 tbsp maple syrup
• 1 tbsp water
• For the stir-fry:
• 1 tbsp olive oil
• 1 garlic clove, minced
• 1/2 courgette, chopped
• 1/2 large carrot, sliced thinly
• 1/4 cabbage, shredded
• 3 – 4 mushrooms, sliced
To garnish:
• Sesame seeds (toasted)
• Spring onions, finely sliced
• Sriracha sauce (optional)
Method:
1. Prepare the tofu:
• Preheat your oven to 175°C and line a baking tray with parchment paper.
• In a bowl, toss the tofu cubes with soy sauce, maple syrup, and a little water until evenly coated. Marinate for 30 minutes.
• Spread the tofu on the prepared baking tray and bake for 15-20 minutes, flipping halfway, until golden and crispy.
2. Cook the vegetables:
• Heat olive oil in a large skillet or wok over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
• Add the carrot slices and stir-fry for 2–3 minutes, then toss in the courgette, cabbage, and mushrooms. Add a little water and stir-fry for another 4–5 minutes until the cabbage is soft.
3. Combine everything:
• Add the baked tofu to the skillet with the vegetables. Pour in soy sauce and mix through.
4. Serve and garnish:
• Transfer the stir-fry to a serving bowl and top with sesame seeds, spring onions, and an extra drizzle of sriracha if desired.
