For the Guacamole:
โข 2 ripe avocados, halved and pitted
โข 1 plum tomato, finely diced
โข 1/3 cup finely chopped coriander
โข 1 red chilli, deseeded and finely minced
โข Juice of half a lime
โข Juice of half a lemon
โข Salt and freshly ground black pepper, to tasteFor the Mango Salsa:
โข 1 ripe mango, diced
โข 1/2 red onion, finely chopped
โข 1/2 cucumber, diced
โข 1/3 cup chopped coriander
โข Juice of half a lime
โข Salt, to tasteFor the Spice Rub:
โข 1/2 red onion, grated
โข 5 cloves garlic, minced
โข 1 tsp brown sugar
โข 1 tsp ground cumin
โข 1 tsp chili powder
โข 1/2 tsp cayenne pepper
โข 1/2 tsp hot paprika

โข 1/4 red cabbage, finely shredded
โข 2 tbsp white wine vinegar
โข 600g firm cod fish fillets

Make the Guacamole:
Remove the avocados from their skin and seed. In a large bowl, mash the avocados. Add the finely chopped tomato, coriander leaves, finely chopped red chilli, lime juice, and lemon juice. Mix well and season with salt and pepper to taste. Set aside.
Make the Mango Salsa:
On a chopping board, finely chop the mango flesh, red onion, cucumber, and coriander leaves together until well combined. Transfer the mixture to a bowl, squeeze in the lime juice, and add a pinch of salt. Mix well and set aside.
Prepare the Red Cabbage:
Finely slice the red cabbage and place it in a bowl. Add the white wine vinegar and mix well to combine. Set aside.
Prepare the Spice Rub:
