Ingredients

For the Guacamole:

•   2 ripe avocados, halved and pitted
•   1 plum tomato, finely diced
•   1/3 cup finely chopped coriander
•   1 red chilli, deseeded and finely minced
•   Juice of half a lime
•   Juice of half a lemon
•   Salt and freshly ground black pepper, to taste

For the Mango Salsa:

•   1 ripe mango, diced
•   1/2 red onion, finely chopped
•   1/2 cucumber, diced
•   1/3 cup chopped coriander
•   Juice of half a lime
•   Salt, to taste

For the Spice Rub:

•   1/2 red onion, grated
•   5 cloves garlic, minced
•   1 tsp brown sugar
•   1 tsp ground cumin
•   1 tsp chili powder
•   1/2 tsp cayenne pepper
•   1/2 tsp hot paprika
•   1/2 tsp salt

Additional Ingredients:

•   1/4 red cabbage, finely shredded
•   2 tbsp white wine vinegar
•   600g firm cod fish fillets
•   12 small corn tortillas


Instructions

Make the Guacamole:

Remove the avocados from their skin and seed. In a large bowl, mash the avocados. Add the finely chopped tomato, coriander leaves, finely chopped red chilli, lime juice, and lemon juice. Mix well and season with salt and pepper to taste. Set aside.

Make the Mango Salsa:

On a chopping board, finely chop the mango flesh, red onion, cucumber, and coriander leaves together until well combined. Transfer the mixture to a bowl, squeeze in the lime juice, and add a pinch of salt. Mix well and set aside.

Prepare the Red Cabbage:

Finely slice the red cabbage and place it in a bowl. Add the white wine vinegar and mix well to combine. Set aside.

Prepare the Spice Rub:

Grate the red onion, mince the garlic, then add it to a small bowl. Add the brown sugar, ground cumin, chili powder, cayenne pepper, hot paprika, and 1/2 tsp salt. Mix together until it forms a paste.

Prepare the Fish:

Rinse the fish fillets under cold water and pat dry with paper towels. Rub the spice paste all over both sides of the fish fillets. Heat a BBQ grill or grill pan with oil. Cook the fish on each side for about 5 minutes, or until cooked through.

Assemble the Tacos:

Heat the tortillas according to the package instructions. Place a portion of the red cabbage on each tortilla. Roughly break up the cooked fish into large pieces and add to the tortillas. Top with a dollop of guacamole and a spoonful of mango salsa.
